Roasted Red Peppers

Both red and green peppers are high in vitamin C, making them one of the prize winners, of aiding in one's good health if added to our diets. My mother use to have a large bowl of roasted red peppers in our refrigerator at all times. Our family used her well loved peppers in sandwiches, mixed in salads or eaten as a side dish. Sometimes she used them as a topping over her delicious homemade pizza. Even though red peppers can be a bit expensive to purchase, You'll feel they were worth adding to your grocery list after tasting this rustic Italian vegetable recipe.
Ingredients;
6 large sweet red bell peppers, left whole
Extra virgin olive oil
1 large clove of minced garlic
Salt and pepper to taste
1 tsp chopped fresh parsley
Lower your oven rack to the middle of your oven. Put your oven on broil. Place the whole red peppers onto a baking sheet that's been sprayed with no stick cooking spray. Put the pan in the oven, keeping the oven door cracked opened. As the peppers are roasting, you will need to turn them often to prevent them from burning. Meanwhile, mince your garlic and chop the parsley. Once the peppers are very soft and and their skins are charred (not completely burned,) remove them from the oven and allow them to cool.
When the peppers have cooled, carefully peel their skins off, discard the stem and remove most of the seeds. Slice them length wise. After you are done thinly slicing each pepper, place them in a bowl. Add the extra virgin olive oil, salt and pepper, minced garlic, and chopped parsley to the bowl. Stir everything together well. You can serve them immediately, or store them in the refrigerator for future use. Roasted red peppers will keep nicely for about a week. If you're going to use them as a side dish, remove them from the refrigerator about 20 minutes before serving them. When they're eaten as a side dish, they taste better at room temperature. For all other uses, they can be eaten chilled if you desire.

I've never tried roasting my own peppers, but you make it sound easy. I do love the ones in the jar, and I'm sure your way would be tastier and healthier!

Hello Olivia, I,m so happy your going to try this recipe. Peppers are very high in vitaman c. I'm just starting my cookbook by sorting the recipes out in sections. I'm also figuring out how my layout's going to be. I'm really looking forward to starting it. My garden clean up is still taking up a lot of my time. I'm pulling out dying vegetable plants, removing stakes and cages, so that I can store them until next spring. My hubby has to till my garden, so I can get some garlic planted by the end of october. After all this is done, I will dedicate much of my free time into writing my "Momma Mia Cookbook," as well as spending time with my children and hubby.

I am cleaning up, too, taking away the terracotta pots from the terrace, washing them and stowing them in the basement.
I used to keep them outside for too long, until they got cracks from frost. So I'll hurry up this year.

Hi Olivia, You are picking the perfect time for cleaning up your terrace. I prefer to use terracotta
pots over the plastic. I think they're prettier and give my porch more of a rustic look.

Hi Linda, Thanks for coming by. I'll be posting many recipes which are vegan that also don't call for legumes. I hope you keep visiting. I'm a vegan too. Many of the recipes on my blog that have dairy ingredients, I replace with soy cheese,tofu, or soy milk instead. I'm usually making two versions of a recipe if it calls for dairy. My family loves dairy, so they get the dairy version. I will then make myself the soy version of that same recipe.

Hi Joan, Thank you for visiting. These peppers are really worth trying. I just started working on my cookbook. Hopefully, I'll be done with it shortly after the new year begins.My book will be mainly vegetarian, but I will also add some healthy meat and fish recipes too. Many of the recipes in my book will be from my mother. She was from Italy and she was a great cook. Fortunately, I payed close attention to how she made many of her authentic Italian dishes, so I can continue making them for myself and others.
